Traditional Balsamic Vinegar from Modena, Italy is unique from all other vinegar-based condiments. It is produced directly from grape juice and is non-alcoholic. The grapes are harvested, crushed and the liquid “must” is boiled over an open fire. After being placed in wood barrels, it undergoes an oxidation process that gradually produces vinegar; over many years micro biotic and enzymatic modifications combine to achieve a balanced flavor and wonderful aroma.
